I’ve not bought ice cream for the house for while now, but know that the kids want a treat every now and then. Especially in the hot weather, splashing in the pool with their friends. So I’ve come up with this easy, creamy and delicious ice lolly. Best of all, the kids and their friends absolutely love them.

SERVES 8 | PREP TIME 15 MINUTES | COOKING TIME 3 HOURS

Ingredients

Berries Ice Lolly

300g frozen mixed blueberries and raspberries
350g greek yogurt
3 tbsp maple syrup or honey
½ lemon squeezed

Matcha Ice Lolly

2 tbsp mactha powder
350g vanilla yogurt
2 tbsp maple syrup or honey
½ lemon squeezed

Creamy Coconut

50g gluten free dessiccated coconut or fresh coconut grated
350g Greek yogurt
3 tbsp honey

 

 

 

 

Place all the ingredients in a blender and blend well until the mixture becomes a puree. Pour into ice lolly molds and freeze for about 3 hours.
