Ingredients
- 1 kg of potatoes
- 2 tbsp chopped fresh dill
- 5 small pickled cucumber sliced
- 2 spring onions thinly sliced
- 2 tbsp lemon juice
- 1 tsp maple syrup
- 340g Greek yoghurt (dairy free optional)
- 170g plain yoghurt (dairy free optional)
- Salt & pepper
Peel the potatoes and add them to boiling water. Par boil them for approximately 15 minutes and set aside to allow them to cool.
In a large bowl add all the ingredients, tasting for the right seasoning. Add the potatoes and combine well. Keep in the refrigerator, ready to serve.
