Ingredients

340g tofu extra firmed
2 tbsp olive oil
1 courgette grated
1 carrot grated
1 pack of rice brown noodles cooked as per the pack

Sauce:
1x400g coconut milk
1 tsp turmeric
1 tsp coriander powder
1 piece of ginger chopped
2 garlic clove
1 tsp cumin
2 tbsp tamari
2 tbsp maple syrup
2 tbsp lemon juice
Pinch of chili powder
Coriander chopped to serve

Method:
Sauce: Place the ingredients for the sauce in a blender and blend till smooth.

Noodles: Cook the noddle as per pack instructions.
Place the oil in a pan and sautee the tofu till a bit brown,, about 10 to 15 minutes. add the vegetables, combine and cook for 3 minutes. Add the sauce and simmer in a lower heat for 15 minutes. Taste for season. Add the cooked noodles and stir. Serve with chopped coriander.
