A really amazing vegetable, Kale is packed with fiber, vitamins and multiple nutrients. This salad is a tasty and nutritious take on the classic Caesar salad, delivery on the strong creamy dressing while leaving out the fats and calories. I like to massage the kale leaves before dressing, as they soften slightly but still retain a crisp.
Ingredients
1 bunch of kale ( 300g) leaves only
50g pomegranade
Dressing
5 tbsp greek yogurt
2 tsp of lemon
2 tbsp olive oil
2 tsp tamari
1 tsp salt
½ tsp white pepper
You can either steam the kale for 5 minutes as it can be a bit hard or massage well with your hands before adding the dressing. You can also add beets if you like.
Combine the ingredients for dressing all together and whisk well. Put it over the kale and mix ensuring every leave is coated. Put on top the pomegranade and serve.
