Ingredients

80g rolled oats
¼ tsp aniseed
Sprinkle of cinnamon
Coconut chips
Handful of blueberries
1/2 tsp chia seeds
water

Place the oats in a large pan, add the aniseed and toast for about 5 minutes. Once the oats have started to brown and they have, with the aniseed, released a toasted smell remove from the heat.

Place the oats in a bowl and use the same pan to make the blueberry compote. Add the blueberries in the pan with a splash of water and a 1/2tsp of chia seeds and cook for 5 minutes, till the blueberries have broken down and the compote thickened.

Put 2 tbsp of coconut yoghurt on top of the oats , then add the compote, sprinkle with coconut chips and enjoy.
