Nourish your body with this super easy and tasty fennel and butterbean stew. Perfect for anytime and season.
Ingredients
1large fennel sliced
1x400g butterbeans drained and rinsed
1 large white onion sliced
2 garlic cloves chopped
2 tbsp olive oil
1 tsp thyme chopped
1 piece of fresh ginger grated
1 tbsp vegetable bouillon powder
2 cups of water
Salt & pepper
Coriander chopped to serve
Place the olive oil in a large pan and heat for 1 minute. Add in the onion and cook for 3 minutes, add the garlic, ginger and cook for a further 1 minute. Then add the sliced fennel, thyme, salt, pepper, and sauté them on a medium heat for 5 minutes. Add in vegetable stock and bring to a boil then simmer for 10 minutes. Garnish with chopped coriander.
