Ingredients
Place the chia seeds in a small bowl with the water and let them set for about 3 minutes.
Sift both flours, baking powder and bicarbonate of soda into a large mixing bowl. Then mix in the cinnamon powder. In another mixing bowl add all the wet ingredients, the apple puree, chia mixture together and whisk. Then pour the mixed wet ingredients into the large bowl with the dry ingredients and whisk well. Once the pancake mix is ready then place a non-stick pan on a low heat and allow to get hot. Once you feel the pan is ready, pour in 1/3 cup of the pancake mix to cook, add a slice of the apple on top, pushing in gently into the mixture. Once bubbles start to form on the exposed side, flip over. Take of the heat once the other side has cooked through. Ensure at all times that the pan doesn’t get too hot, as you will risk burning the outside of the pancake.
Enjoy with maple syrup, coconut yoghurt and coconut chips.
