Avocado on Toast with Poached eggs
One of my favourite breakfast dishes, also enjoyable any time of day. Served on a slice of Moni’s Sunflower Seeds toast, you get the layers of different textures the crispness of the toast, smoothness of the avocado and the gorgeous runny yolk of the egg.
Cauliflower Pizza
This is it, the optimum gluten free pizza base. I've tried countless recipes for alternative pizza bases and graded them on texture, moisture absorbness and crispiness of crust. This recipe ticks all the boxes. Best of all, it passed the most crucial test: the kids absolutely loved it.
Kale Caesar Salad
A really amazing vegetable, Kale is packed with fiber, vitamins and multiple nutrients. This salad is a tasty and nutritious take on the classic Caesar salad, delivery on the strong creamy dressing while leaving out the fats and calories. I like to massage the kale leaves before dressing, as they soften slightly but still retain a crisp.

Roasted Butternut Squash & Spinach Salad
As you can imagine, salads make up a big part of my culinary regime. With this recipe I’ve combined three great ingredients that go famously well together: butternut squash, spinach and feta cheese. The spinach is an excellent host to the sweet butternut squash, that is beautifully offset by the salty and crumbly feta cheese. A salad for all occasions.

A super grain, loaded with essential amino acids, protein and slow burning carbs, Quinoa’s versatility also makes it adaptable to many dishes. One of my favourite ways to serve it is as a salad. My recipe incorporates delicious flavours with different textures that work very well with the Quinoa. This is a simple, tasty and nutritious dish that can be eaten any time of day.
Quinoa Banana Loaf
This marvelous recipe marries the gorgeous sweet flavours of a cake with the versatility of a loaf. A moist and delicious loaf that comprises all the healthy nutritional benefits of quinoa, flax seeds, egg whites and bananas with the additional bonus of being gluten free. A taste wonder eaten on its own, or toasted with a spread of low fat smooth cottage cheese and some of Moni's raspberry jam.
Brazilian Carrot Cake
This one really is a blast from the past. A favourite baked treat my mother made and rapidly devoured by my siblings (and me). Of course, Moni being Moni, I have revised this recipe to ensure it conforms to my healthy profile. It's still as tasty as I remember it.
Berrylicious Ice Lollies
I've not bought ice cream for the house for while now, but know that the kids want a treat every now and then. Especially in the hot weather, splashing in the pool with their friends. So I've come up with this easy, creamy and delicious ice lolly. Best of all, the kids and their friends absolutely love them.
