One of my favourite breakfast dishes, also enjoyable any time of day. Served on a slice of Moni’s Sunflower Seeds toast, you get the layers of different textures the crispness of the toast, smoothness of the avocado and the gorgeous runny yolk of the egg.

Kale Caesar Salad

A really amazing vegetable, Kale is packed with fiber, vitamins and multiple nutrients. This salad is a tasty and nutritious take on the classic Caesar salad, delivery on the strong creamy dressing while leaving out the fats and calories. I like to massage the kale leaves before dressing, as they soften slightly but still retain a crisp.

Roasted Butternut Squash & Spinach Salad

As you can imagine, salads make up a big part of my culinary regime. With this recipe I’ve combined three great ingredients that go famously well together: butternut squash, spinach and feta cheese. The spinach is an excellent host to the sweet butternut squash, that is beautifully offset by the salty and crumbly feta cheese. A salad for all occasions.

Quinoa Banana Loaf

This marvelous recipe marries the gorgeous sweet flavours of a cake with the versatility of a loaf. A moist and delicious loaf that comprises all the healthy nutritional benefits of quinoa, flax seeds, egg whites and bananas with the additional bonus of being gluten free.
