I love this take on the classic Puy lentil salad. It’s full of flavor and amazing textures. Aubergine Parmigiana

Lentil Bolognese

A true family favourite and as wholesome and fulfilling as the meat version. This is a dish that is not only tasty and simple to make, but packed with proteins, essential amino acids, iron and fiber. An all-rounder that can be served with spelt pasta, brown rice or cooked quinoa. I sometimes warm some up and have it on its own in a bowl, absolutely yummy.

As a vegetarian I absolutely relish tasty dishes that everyone will enjoy, meat eaters included. This dish covers all bases; it’s packed with flavor, wholesome with a large element of a comfort food. Tropical Fruit Chia

My parents had a papaya tree in their garden and I grew up enjoying this wonderful fruit every season. It has such an amazing unique flavour and is perfect for smoothies. Papaya is absolutely loaded with Vitamins A & C, magnesium and beta-carotene and is a great antioxidant.
