Brazilian Black Beans
You don’t expect me not to feature at least one Brazilian classic. How much more Brazilian can you get than black beans that are uniquely South American but similar to pinto beans. A staple in my mother’s kitchen, it accompanies anything, rice, potatoes, fish, meat, chicken, you get the picture. My family absolutely love it, as it is a weekly feature in our home. What a result, protein and fiber packed in a tasty dish.
Quinoa Porridge
Quinoa is really one of the super food greats, wholesome and packed with essential amino acids, protein and vitamins. I have officially surrendered all store bought cereals and now have this Quinoa Porridge as one of my breakfast options. Red Pepper Hummus
If you’ve tried my butternut squash hummus, you’ll love this version with red peppers. I’ve kept the recipe a lot closer to the traditional one, but opted for lighter tahini for a lighter dish. The red pepper gives it a wonderful sweet element, almost fruity.

Courgette Vichyssoise Soup
Courgette is one of my favourite vegetables and happens to also be exceptionally versatile. I use it for so many of my dishes and it works very well as in ribbons as a replacement for pasta. It is packed with Vitamins K and C and is on the list of ‘greens’ to eat regularly. In my take on the classic Vichyssoise soup I use it instead of the potato. I hope you enjoy it.
