This one comes from husband, who has made it his mission to cook breakfast for the whole family every day. It’s actually become one of my favourties, light, tasty and nutritious. Gets you going for the day.

Serves 1 | Prep Time 5 minutes | Cooking Time 5 minutes

Ingredients

1 whole egg
2 egg whites
2 handfulls of spinach
Salt and pepper
(add some crumbled low fat feta if you feel indulgent)

In a bowl whisk the eggs well and season with salt and pepper. Use a very high quality non-stick pan, please don’t use the cheaper variety. Place the pan on a medium heat and add the eggs to it. Scramble with a non-metal utensil and remove from the heat before the eggs are fully cooked and are still runny. Fold in the spinach (and feta if you wish) and serve.

Best served with your choice of Moni’s quinoa bread well toasted.
