Moni’s fruit spiced brussels sprout. This amazing festive classic mixes the savoury flavours of brussels sprouts with gorgeously sweet berries, all beautifully spiced. A must for any festive meal.

Ingredients

  • 1 pack of brussels sprouts cut in half (500g)
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • 1 tsp cumim
  • 1 tbsp red cider vinegar
  • 1 tbsp tamari sauce
  • 15g dried cranberries
  • 30g pomegranate
  • Salt & pepper

Cut the brussels sprouts in half and place in a bowl. Add the olive oil, tamari, vinegar, garlic powder, cumin, salt & pepper and combine well so they are all coated. Spread them onto a baking tray and bake for 30 minutes, checking and shaking them after 15 minutes. Add the cranberries in the last 2 minutes and continue to bake. Remove the tray from the oven and place in a serving dish spreading the pomegranate on top. Enjoy.
