A true family favourite and as wholesome and fulfilling as the meat version. This is a dish that is not only tasty and simple to make, but packed with proteins, essential amino acids, iron and fiber. An all-rounder that can be served with spelt pasta, brown rice or cooked quinoa. I sometimes warm some up and have it on its own in a bowl, absolutely yummy.
Ingredients
200g red lentil
2 carrots shredded
2 celery diced
1 red onion diced
1 garlic diced
2 large tomatoes diced
2 tbsp tomato paste
1 tsp organic vegetable stock
1 tbsp very light cooking olive oil
200ml water
Coriander
Salt & Pepper
In a casserole pan heat the oil and add the onions and cook for about 5 minutes until it is soft. Add the garlic and cook for another 1 minute. Add all the other ingredients and cook in a low fire for about 20 minutes. Garnish with coriander and serve.
