Amazingly savory patties, wholesome and delicious. Our own mix of nutritious lentils, onions and Moni’s special mix of spices.

Serves 5 | Prep time: 10 minutes | Cooking time: 25 minutes |

Ingredients

•200g green lentils
•70g rice flour
•1 large red onion chopped
•1 tsp cumin
• 1 ½ tsp turmeric
•1 tsp cumin
•1 tsp lime zest
•½ tsp chilli flakes
•1 tsp coriander powder
•½ tsp salt
•1 tsp fennel seeds crushed
•2 tbsp coriander chopped
Coriander Sauce
•200ml tahini
•1 cup coriander chopped
•2 lemon juice
•1 tbsp honey
•Salt & pepper

Cook the lentils with 1 tsp of turmeric for about 25 minutes. Once cooled place in a food processor and blend it coarsily, set aside. Place all the remaining ingredients in a large bowl, then add the cooked lentils and combine well.

Place 1 tsp of olive oil in a frying pan and cook the pattys for 2 minutes on each side, than place in a baking tray and bake for 20/25 minutes.

Serve with coriander sauce.

 

Coriander Sauce

Whisk all together until a thick consistency, however ensuring that it’s not too thick. If so then add some more water. Alternatively you can place the ingredients in a food processor and blend till smooth.
