It’s hard to believe that it’s already October and Halloween is just around the corner. A traditional time for lots of sweeties in this spooky period for kids and adults alike. But we all know the evils of sugar, a leading contributor to obesity, heart disease and diabetes. So at Moni’s we will focus on delivering some ghoulish healthy and sugar free treats.
Moni’s Healthy Alternative
- Moni’s pumpkin oats bar
- Pumpkin Brownies
Serves 15 | Prep time: 5 minutes | Cooking time: 45 minutes |
Ingredients
- 300g gluten free jumbo oats
- 300g fresh pumpkin puree
- 200ml coconut milk
- 1 tsp cinnamon
- 130ml maple syrup
Icing:
- 200g Greek yoghurt
- 4 tbsp maple syrup
- Pumpkin seed on top
Cut the pumpkin in dices and place in the oven for 25 minutes. Once completely baked, mash it with a fork until you get a paste consistency. Then place all the ingredients in a food processor and whizz until well combined. Pour the mixture in a 20x25cm baking tray and bake for 20 minutes.
