This amazing spinach and basil pesto contains a fresh and healthy array of ingredients come together to deliver a powerfully tasty meal. Serve it with wholemeal penne or your favourite pasta.

Ingredients
- 500g brown pasta
- 600g of spinach
- 150g coriander
- 70g basil
- 60ml olive oil
- 1 garlic glove crushed
- 100g parmesan cheese
- ½ cup sunflower seeds
- 4 tbsp lemon juice
- Salt & pepper
Cook the pasta as per the package information and set aside. Place all the remaining ingredients in a food processor and blend till smooth, taste for seasoning.
I like the idea, thanks Moni. I will try your yummy recipe with kale, watercress or collard greens instead of spinach. I can’t have spinach, too acidic for me unless it’s baked, becomes alkaline.
