These mini pumpkins truffle are so delicious, full of vitamins and nutrients. Pumpkin is also believed to slow the rate of sugar absorption into the blood.

Ingredients
- 1 cup desiccated coconut
- 12 medjool dates
- 1 cup of sunflower seeds
- 120g pumpkin puree
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1 tsp turmeric
- Pumpkin seed on top
- Black sesame seeds (optional)
Place the sunflower seeds in a food processor and blend for 3 seconds, add the dates and blend again. Add all the other ingredients and blend it until well combined. Shape the mixture into balls and roll them in the desiccated coconut mixed with turmeric powder and black sesame seeds. Keep in the freezer for 1 hour than transfer to the fridge.
