I love this take on the classic Puy lentil salad. It’s full of flavor and amazing textures. The healthy benefits of Puy lentils are many, packed with fiber and also helps prevent blood-sugar levels from rising and contains seven important minerals, vitamin B and protein. This delicious salad goes famously well with some grilled fresh salmon.

SERVES 5 | PREP TIME 15 MINUTES | COOKING TIME 20 MINUTES

Ingredients

300g puy lentils
4 tbsp olive oil
1 celery diced
1 carrot diced
1 spring onion finely diced
2 tsp cider vinegar
½ tsp salt
pepper
Balsamic vinegar to drizzle

Place the lentils in a pan, cover with water and boil for 15 minutes until the lentils are cooked but with a bite and not too soft. Drain and set them aside.

In a bowl combine all the remaining ingredients and mix well. Add the lentils and combine, taste for seasoning, adding more salt, pepper or cider vinegar if necessary. Serve it with fish, chicken or on its own.
