Moni’s delicious vegan breakfast. Beautifully seasoned scrambled tofu and spinach served on gluten free toast. A tasty nutritious breakfast packed with protein and vitamins and super scrumptious.
SERVES 4| PREP TIME 5 MINUTES | COOKING TIME 10 MINUTES
Ingredients
- 1 pack of firm tofu
- 2 spring onions chopped
- 5 cherry tomatoes chopped
- Handful of spinach chopped
- 1 tbsp nutritional yeast
- 2 tsp turmeric
- 1 tsp tamari sauce
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 2 tbsp coriander chopped plus extra to serve
- Salt & pepper
Put the tofu in a large colander with a plate on top to place pressure, draining excess water (2 or 3 large potatoes works well). Set aside for 30 minutes. Remove the plate and crumble the tofu with a fork.
Place the oil in a pan to heat, add the spring onions and cook for 2 minutes. Add all the other ingredients and cook for another 5 to 8 minutes. Serve with Moni’s range of quinoa bread.
