Serves the 4 | Prep time: 3 minutes | Cooking time: 10 minutes |

Ingredients

200g gram flour
3 tbsp flaxseed
100g of spinach
400ml rice milk
1 tbsp olive oil
Salt & pepper
Sprinkle of Zaatar to serve
Rucula to serve

Filling:
200g mushrooms sliced
2 garlic cloves crushed
1 tbso olive oil
1 tbsp miso paste
1 tbsp water
Salt & pepper
Coriander chopped
Rucula

Place all the ingredients in a blender and blend until a smooth batter. Set aside for 5 minutes.

Place ​a large pan over a medium heat, once warm add some olive oil ,pour ¼ cup of the batter and cook for a few minutes on each side until the bubbles start to form. Repeat until the mixture finishes.

Using the same pan, add the olive oil, garlic and cook for 1 minute. Then add the mushrooms, miso paste, water and combine well cooking for about 5 minutes until the mushrooms are cooked. Season to taste.

Serve with the miso mushrooms, rucula, a squeeze of lemon, and a good sprinkle of zaatar. Enjoy!
