Moni’s Vegan Brazilian Shakshuka, our own savoury breakfast, lunch or dinner made with Brazilian black beans, tomatoes, tofu, red pepper, avocado and a tantalizing selection of spices and herbs.

Serves 8| Prep time: 5 minutes | Cooking time: 30minutes |

Ingredients

  • 1 large onion chopped
  • ½ red pepper chopped
  • 2 garlic glove chopped
  • 3 tbsp olive oil
  • 2 tbsp tomato paste
  • 2x400g cans of tomato sauce + half can of water
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ¼ tsp chili powder
  • 2x400g cans of  black bean
  • Salt & pepper
  • Chili flakes
  • Chopped coriander
  • Avocado sliced (optional)

Tofu Eggs

  • 180g firm tofu
  • ½ tsp turmeric
  • salt & pepper
  • 2 tbsp rice milk or water

Heat the oil in a large pan and sauté the onions for 5 minutes, add the garlic and cook for 1 minute. Combine the tomato paste, red pepper, cumin, paprika and sauté for 2 minutes. Pour the tomato sauce and water into the pan and simmer over a medium heat for 20 minutes. Mix in the black beans and taste for seasoning. Add 2 tbsp’s of the tofu egg mixture on top, cover with the lid and steam for 2 minutes. Garnish with some chili flakes and coriander and finish off with some avocado slices.

Tofu Eggs

Place all ingredients in a blender and blend until smooth.
