Since becoming vegan, I’ve been making this scrambled tofu as a great breakfast option. Looks wise it is very similar to traditional scrambled eggs, but with a unique delicious texture and flavour. Super easy and quick to make and you can add to it whatever you like, mushrooms, vegan cheese etc. Served on toasted sourdough, simple and delicious.

Serves 4 | Prep time: 5 minutes | Cooking time: 10 minutes |
Ingredients
•1 pack of firm tofu about 200g
•2 spring onions stalk chopped
•5 cherry tomatoes cut in half
•½ red pepper chopped
•1 tbsp nutritional yeast
•1 garlic clove chopped
•½ tsp turmeric
•1 tsp tamari sauce
•1 tbsp lemon juice
•1 tbsp olive oil
•Coriander or basil chopped
•Salt & pepper
•Chili flakes
In a pan heat the oil, then add the spring onions, red pepper and sauté for 2 minutes. Add the garlic, cooking for another 1 minute. Pour in the crumbled tofu and all the remaining ingredients. Cook on a lower heat for 5 minutes, taste to season and serve with your favourite bread. We love to serve this dish with Moni’s sourdough or any of Moni’s range of quinoa bread.
